Lemonades, soft drinks, iced teas, flavoured waters: lemon is one of the most widely used citrus fruits in beverages, but it does not always go into the bottle in the same form. For product developers, choosing lemon ingredients for beverages is first of all a technical decision: do you need acidity, aroma or visible pulp? Each function calls for a different semi-processed product, and the right choice makes recipe, stability and labelling simpler.
Acidity, aroma, body: what lemon brings to a drink
The juice brings acidity, mainly from citric acid. The pulp, with its juice vesicles and natural fibre, adds body and the cloudiness typical of lemonades. The peel holds the essential oils, with limonene as the main component and citral as the key molecule of the “lemon” note. The oils do not dissolve in water: clear drinks get them through extracts or emulsions, while in an infusion or a cloudy drink part of the aroma comes from the fruit itself.
Lemon ingredients for beverages: which product for which drink
- Frozen lemon pulp: the base for cloudy lemonades, drinks “with pulp” and craft soft drinks, bringing acidity and body in a single ingredient. See our frozen lemon pulp.
- Frozen lemon quarters: for producers who press or extract in-house and for smoothies that include some peel, as with frozen orange quarters for juice.
- Peel in strips, julienne or cubes: for infusions in iced teas, flavoured waters, fermented drinks and syrups, when you want the lemon aroma without its acidity.

The stability issue: heat, light and oxygen
The fresh aroma of lemon is delicate: citral breaks down with heat, light and oxygen, especially in acidic conditions, and over time a drink can lose freshness or develop off-notes. Pasteurisation, bottle and headspace therefore need to be assessed together with the recipe. In cloudy drinks the pulp also tends to settle, which calls for homogenisation, suitable hydrocolloids or a “shake before use” instruction. All of this must be validated with stability tests.
A consistent recipe, batch after batch
Acidity and sugars in fresh lemons vary from one harvest to the next. With a semi-processed product and its data sheet, the formula is adjusted to the actual batch values: the sugar-to-acid ratio is the parameter a lemonade is balanced on (see Brix and acidity in Calabrian citrus). Demand for lemon drinks also peaks in summer, while the harvest is concentrated in other months: frozen product at −18 °C bridges that gap.
Labelling: real fruit and declarations
With pulp or juice, lemon appears in the ingredient list. If it is part of the product name or emphasised on the label, Regulation (EU) No 1169/2011 requires its percentage to be declared (QUID); flavouring declarations, including “natural lemon flavouring”, are governed by Regulation (EC) No 1334/2008. Beverages normally use frozen product: SO₂ product, designed for candying, must be desulphited, and sulphites above 10 mg/l expressed as SO₂ are declared as allergens.
What to specify in your request for quotation
- type of drink and the role of lemon: acidity, aroma, body or visible pieces;
- product and cut, with pulp fineness and allowed seeds and peel;
- packaging suited to your line, seasonal and annual volumes;
- post-harvest treatments, when the peel goes into the drink.
Our Calabrian lemons are processed in San Ferdinando, frozen or in SO₂, as quarters, segments, strips, cubes, slices and julienne. For bar service, see our frozen lemon wedges.
Frequently asked questions
Can lemon pulp replace juice concentrate?
It depends: pulp brings acidity, body and cloudiness; clear drinks may need filtered juice or other ingredients.
Does peel in an infusion make the drink bitter?
The aroma is in the flavedo, the yellow layer; the albedo, the white layer, brings bitterness. That is why the allowed albedo is agreed in the data sheet.
Do you also supply lemon juice?
Juice is not one of our standard products: we supply frozen lemon pulp and cut lemons, frozen or in SO₂. Other formats can be assessed on request.
