Good orange marmalade starts before cooking: it depends on variety, peel-to-pulp ratio and consistency of the raw material. For industrial producers, starting from ready-to-use semi-processed orange means more stable recipes, less labour and year-round production.
What the rules say
In the European Union, Directive 2001/113/EC, as amended by Directive (EU) 2024/1438, reserves the name marmalade for products made from citrus fruit: since 14 June 2026 the legal name is “citrus marmalade” or the name of the citrus followed by “marmalade”, such as “orange marmalade”. The rules also set a minimum citrus content, part of which must come from the pulp. For labelling details, always check the consolidated text and national implementing law.
Sweet or bitter orange?
- Bitter orange: the classic marmalade orange. Its peel is rich in aroma and pectin, and the bitter note gives character. We supply Calabrian bitter orange pulp.
- Sweet orange: gives softer, fruitier marmalades, ideal for fillings and everyday use, often starting from orange pulp.
Many producers blend the two to balance bitterness, sweetness and texture.

The role of the peel
Peel makes a difference in three ways: aroma (essential oils in the flavedo), structure (albedo pectin helps gelling) and appearance (visible strips or cubes in the jar). Choose the right cut: thin strips for an elegant marmalade, cubes for a rustic product, finely processed pulp for smooth fillings.
Frozen pulp or fresh fruit?
Processing fresh fruit concentrates production in the harvest months. Pulp frozen at −18 °C spreads production across the year, with clean, standardised raw material — see our article on frozen orange pulp for industry.
What to assess for yield
- Peel-to-pulp ratio of the semi-processed product;
- Brix and acidity of the raw material;
- presence of seeds and fibrous parts;
- consistency between batches.
All parameters to be agreed in the data sheet before supply.
Frequently asked questions
Can a strawberry jam be called “marmalade”?
As a rule, no: in most of the EU marmalade is citrus only. The directive allows Member States where “marmalade” is a synonym for jam to authorise that use on their territory.
